Agua fresca (“fresh water”) is a popular type of drink found in Mexico and in lots of places around the United States. They’re made from a variety of different ingredients from fruit to flowers to rice to seeds. Since the ingredients can be quite sweet, water is often added to dilute them down. As a result, you’re left with a refreshing, cooling drink. Fresh water, indeed.

Coconut Lime Agua Fresca

This Coconut Lime Agua Fresca is a refreshing way to stay cool this summer! This bubbly homemade drink is paleo and refined sugar-free...plus, it comes together with just four simple ingredients. Serve it over ice and enjoy some chill.

Coconut Lime Agua Fresca

Ingredients:

  • 1/2 cup coconut milk (full-fat)

  • 1 tbsp honey (raw)

  • 16 ounces sparkling mineral water

  • 1 lime juiced

  • 8 ice cubes

Instructions:

  • Make the concentrate. In a small pot over medium heat, warm the coconut milk and honey, stirring until the honey is dissolved. You can refrigerate this for later or use right away.

  • Pour your coconut lime agua fresca. In a pint glass, add 3-4 cubes of ice. Pour half the coconut milk / honey concentrate in the glass. Top with about 8 ounces of sparkling water and the juice of half a lime. Stir to combine.

  • Repeat for the other glass and serve. Drink immediately for best results!

If using straws, please opt for metal straws or paper straws instead of plastic. Small changes do add up.
